Ingredients:
- 8 oz. rice vermicelli noodles or vermicelli bean-thread noodles
- 1 Tbls. Oil
- ½ pound ground poultry
- 2 Tbls. Fish sauce
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, finely grated or chopped
- 6 cups chicken broth
- ½ tsp. red chili flakes
- 2 eggs, beaten
- ½ package bean sprouts
- Juice of 2 limes
Instructions:
In a large soup pot, heat oil and add meat, fish sauce, shallots, garlic and ginger. While stirring, cook until meat is no longer pink, (@ 5 minutes). Add broth, chili flakes, and bring to a boil. Add eggs and stir continuously until they solidify. Add noodles and bean sprouts, then simmer until eggs and sprouts are soft. Squeeze in lime to taste. Serve soup as is or with any combination of lime wedges, fresh cilantro, fresh mint or fresh basil.
Note: For advanced diet, use only bean-thread noodles. Rice noodles okay for core diet.
