Ingredients:
- 2 large avocados, peeled and chopped, sprinkled with lemon or lime juice
- 1 can black beans
- 2 cups cooked quinoa or brown rice (or a combination)
- 2 tomatoes, chopped
- 1 cucumber, chopped
- 1/4 onion, finely chopped
- 4 Tablespoons olive oil or avocado oil
- juice of 2 limes or 1 lemon
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon sea salt
- 1/4 teaspoon pepper
- fresh mint, handful, chopped
- fresh cilantro, handful, chopped
Instructions:
In a large bowl, combine the first 6 ingredients for the salad. In a separate bowl, combine the remaining ingredients for the dressing. Pour the dressing over the salad and combine.
