Ingredients:
- 3 cups cooked or canned black beans, rinsed and drained
- 1 cup cooked quinoa
- 1 medium carrot, shredded
- 1/3 cup ground flax seed
- 2 eggs
- 2 cloves garlic, minced
- 2 tsp. Dijon mustard
- 1 tsp. ground cumin
- ½ tsp. salt
- ¼ tsp. pepper
- Grape seed oil for grilling
Topping:
- Avocado, diced
- 1 cup salsa
- Juice of one lime
Instructions:
- Mash the black beans with a potato masher (or use a food processor).
- Add the remaining ingredients and combine well.
- Form into 8 patties.
- Lightly brush the patties with grape seed oil.
- On the Bar-B-Q, grill each side for about 5 minutes.
- Blend the ingredients for the topping.
- Serve over the burgers.
