Crust Ingredients:
- 1&1/2 cups coconut flour
- 1&1/2 teaspoons xylitol
- 1/2 teaspoon salt
- 1/2 cup coconut oil
- 3 tablespoons almond milk
Sift together the flour, xylitol and salt. Blend with the coconut oil, adding the milk if needed. Press into the bottom of a deep dish glass or ceramic pie plate.
Pie Ingredients:
- 2 heads garlic, roasted
- 1 cup fontino cheese
- 3-4 large tomatoes
Instructions:
Spread the roasted garlic on the pie crust. Layer the bottom of the pie with half of the cheese. Layer the tomatoes on top, then top with the remaining cheese. Bake at 350 F for about 1 hour.
Note: You can substitute the fontino cheese with ½ cup of grated asiago on the bottom layer and ½ cup of crumbled goat cheese on the top layer. Add two tablespoons of fresh chopped basil for added flavor.
