Serves 10
Ingredients:
- 2 cups almond flour
- ¾ cup xylitol
- ½ cup of ground flax
- ¼ cup garbanzo-bean flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ cup cocoa
- ¼ tsp sea salt
- 1/3 cup coconut oil melted
- 3 medium bananas
- 3 large eggs, separated
- ½ cup of chopped pumpkin seeds
Instructions:
- Combine first 8 ingredients. Stir in next 3 ingredients (but not the egg whites)
- Beat egg whites using mixer for 2 minutes or until soft peaks form. Gently fold into batter and add pumpkin seeds.
- Pour batter into lined 8 X 8 pan lightly coated with butter.
- Bake at 350 degrees F for 45 minutes or until done. Let cool in pan.
