Ingredients:
- 1 cup of pecans (or walnuts)
- 1 cup oat flour
- ¼ cup unsweetened cocoa powder
- ¼ cup xylitol
- 1 large free-range egg
- ¼ cup melted coconut oil
- 1 cup 2% Greek yogurt
- 1 cup raspberries, blueberries or strawberries
- 2 Tbsp xylitol
- 2 tsp vanilla extract
- 1 tsp orange zest
Instructions:
- To make crust, place pecans in food processor and grind into little bits. Add oat flour, cocoa powder, xylitol, egg and coconut oil in processor until mixture clumps together.
- Place in fridge for 30 minutes.
- Preheat oven to 350 degrees F
- Press dough into 9 in lightly greased pie pan
- To make filling, mix yogurt, berries, xylitol, vanilla and orange vest in a large bowl
- Spread mix into the crust
- Bake for 20 minutes or until yogurt sets
- Let cool, serve refrigerated
