Advanced Recipe
Soup:
- 1 cup cut up chicken pieces
- 1 Tbls. coconut oil
- 1 cup onions, chopped
- 1 stalk celery, chopped
- 2 cups chicken broth
- 2 cups cauliflower, chopped
- ½ tsp. sea salt
- ¼ tsp. pepper
- ½ teaspoon marjoram
- ½ cup peas
- ½ cup coconut milk
In a large pot, sauté the onion, celery and chicken in the coconut oil until tender. Add the broth, spices and the cauliflower and gently boil until the cauliflower if tender. Add the coconut milk and peas. When the soup comes to a rolling bowl, add the dumplings.
Dumplings:
- 4 eggs
- ¼ cup butter or melted coconut
- ¼ tsp. salt
- 1/3 cup sifted coconut flour
- ¼ tsp. baking powder
Instructions:
- Combine the coconut flour, salt and baking powder. Add the eggs and butter/coconut oil to the dry ingredients. Blend until there are no lumps. This may take a bit of stirring but keep at it.
- Drop batter by the ¼- ½ tsp. on top of the soup to make the dumplings. The dough expands so the small amount of dough makes a nice-sized dumpling.
