Ingredients:
- 2 cups cooked chickpeas
- 2 tablespoons almond and peanut butter
- 2 tablespoons coconut oil
- Stevia to taste (I used a dropper full of liquid stevia)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- Pinch of sea salt
- 1/4 cup of mini chocolate chips (semi-sweet or stevia sweetened chocolate chips)
Instructions:
In a food processor, combine all ingredients except the chocolate chips and blend until smooth. Add the chocolate chips, then cover and chill. Serve with apple slices or Mary’s crackers
Note: Once chilled, the hummus can be rolled into bite-sized balls and served as truffles.
