Ingredients:
- 8 oz. Red Rooster Bean and Pea Thread Noodles (6 stacks)
- 2 Tbls. rice vinegar
- 1/4 cup soy sauce
- 1/4 cup peanut butter
- 2 Tbls. grated fresh ginger
- 1 Tbls. sesame oil
- 1 tsp. xylitol
- Juice of one lime
- 1/2 cup hot water
- 2 cups shredded cabbage
- ½ cup diced red pepper
- ½ cup chopped cilantro
- Juice of one lime
- 1 diced apple
- ½ cup diced jicama
- 2 Tbls. toasted sesame seeds
Instructions:
- Cook the pasta, drain and set aside.
- To make the dressing, combine all the ingredients into a small bowl and stir together.
- Add the dressing to the pasta and toss.
- Add the remaining salad ingredients to the pasta mixture and toss until well blended.
