- 2 large seedless cucumbers, chopped
- 3 large avocadoes, peeled, pitted and chopped
- 1/2 cup feta cheese, finely grated (or crumbled)
- 1/4 small red onion, finely chopped
- 2 tablespoons of fresh dill, finely chopped
- juice of 1 large lemon
- pinch of pepper
Combine all the ingredients except the cheese in a bowl. Sprinkle the cheese on top.
Swaps: Omit the dill and lemon and replace with the juice of 2 limes, a dash of hot sauce to taste, (Sriracha), and 2 tablespoons freshly chopped cilantro.
