Advanced Plan
Ingredients:
- 3 orange, red or yellow bell peppers, halved and seeded
- 4 zucchini, cut in half lengthwise
- olive oil for grilling
- salt and pepper
Heat barbecue to medium heat. Brush peppers and zucchini with the oil and lightly salt and pepper. Grill the vegetables, turning them as they cook, until they are slightly charred. Set aside.
Ingredients:
- 1 English cucumber, chopped
- 3 green onions, thinly sliced
- 12 cherry tomatoes halved or 2 medium tomatoes, chopped
- 1 cup Kalamata olives, halved or sliced
- 1/3 cup fresh cilantro, chopped
- ½ cup fresh mint leaves, chopped
- 4 oz. feta cheese, crumbled
- ½ cup olive oil
- ¼ cup lemon juice
- 1 teaspoon ground cumin
Instructions:
- Combine the cumber, onions, tomatoes, olives, cilantro, mint and feta cheese.
- In a separate container, whisk the olive oil, lemon juice and cumin together. Pour the dressing over the salad ingredients.
