- 4 cups water
- Juice of 4 lemons
- 3 inch knob of ginger, peeled and sliced
- 1 cup xylitol
- In a pot, combine the water, lemon juice, ginger and xylitol and bring to a boil. Once boiling, cover and reduce the heat to simmer.
- Simmer for 15-20 minutes until the ginger is soft and the flavours meld. Cool liquid and pour through a sieve. This siple syrup can be stored in the fridge for a week.
To serve, pour the syrup into a glass, 1/3 to 1/2 full. Add ice. Top with sparkling water.
