Core Diet
Serves 4
Ingredients:
- 1 cup cooked millet
- 1 cup diced red peppers
- 1 cup chopped red cabbage
- 1 cup chopped cucumbers
- ¼ cup chopped green onions
- ¼ cup crumbled feta cheese
- ¼ cup olive oil
- 3 Tbls. freshly squeezed lemon juice
Instructions:
- Combine millet, peppers, cabbage, cucumber, onions and feta in a bowl.
- Sprinkle with the oil and lemon and toss.
