Ingredients:
- 300 gram (10 oz) package frozen, chopped spinach, thawed and squeezed well to remove moisture
- 4 eggs beaten
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- 1/4 tsp. salt
- 1/4 cup grated parmesan cheese
Instructions:
Butter an 8×8 inch baking pan. Blend all the ingredients in a bowl. Pour into the greased pan and bake at 400 degrees F. until the mixture is set and slightly browned, (approximately 30 minutes). Cut into pieces and store in the fridge or freezer. If you would like the “bread” to be thinner, spread the mixture into a 9×13 inch pan. (I tripled the recipe and used a large cookie tray.)
Note: I found this recipe on several sites with slight variations. Some recipes used only 2 eggs. Others omitted the parmesan cheese and garlic powder. Decide how you want to use the “bread”, then adjust accordingly. Several sites also suggested using this recipe at a pizza crust.
