Ingredients:
- 2 cups oven roasted sweet potatoes, peeled and chopped
- 2 tablespoons flax meal
- 1/4 cup cocoa powder
- 2 tablespoons coconut oil
- 1 teaspoon vanilla
- 1 pinch of sea salt
- 1cup plain organic yogurt
- stevia or xylitol to taste
Instructions:
Mash the sweet potatoes, then blend in all the ingredients except the sweetener. Add sweetener to taste. (I used 1 dropper full of chocolate flavoured stevia.)
Serve as is or with toppings. You can use chopped nuts, unsweetened coconut flakes, or fresh berries.
(Or use 2 tablespoons chia seed, 2 cups coconut milk instead of the yogurt and coconut oil)
