1 cup of each: chopped onion, green pepper, celery
Drain and rinse 1can of black beans, 1 can of corn niblets, 1 can of black-eyed peas
Combine all ingredients in a bowl.
Dressing:
- ½ cup olive oil, 3/4 cup apple cider vinegar, 1/3 cup sugar (or honey or agave nectar or rice syrup)
- Bring all ingredients to a boil, then cool, about 25 minutes.
- Add dressing to other ingredients, toss. Add cayenne or hot peppers to taste. Refrigerate.
